Banduryky is a traditional Ukrainian dish made with potatoes, mushrooms, and a creamy sauce. The name “banduryky” comes from the Lemko dialect, where “bandura” means “potato.” This dish is a delicious and hearty way to enjoy potatoes, and it is sure to warm you up on a cold day.

Ingredients:

For the potato pancakes:

  • 800 grams (7 cups) potatoes, grated
  • 1 onion, grated
  • 2-3 cloves garlic, grated
  • 1 egg
  • 1 tablespoon sour cream
  • 2 tablespoons flour, plus more as needed
  • Salt and black pepper to taste
  • Vegetable oil for frying

For the mushroom sauce:

  • 220 grams (1/2 pound) mushrooms, sliced
  • 1 onion, chopped
  • 2 tablespoons butter
  • 1 tablespoon flour
  • 150 milliliters (1/2 cup) water
  • 190 milliliters (3/4 cup) sour cream
  • Salt and black pepper to taste

For assembly:

  • Shredded cheese (optional)

Instructions:

  1. To make the potato pancakes, combine the grated potatoes, onion, garlic, egg, sour cream, flour, salt, and pepper in a large bowl. Mix well until the ingredients are evenly combined.
  2. Heat a large skillet over medium heat. Add a small amount of vegetable oil to the pan.
  3. Scoop the potato mixture into the pan, forming small pancakes. Fry the pancakes for 2-3 minutes per side, or until golden brown and cooked through.
  4. To make the mushroom sauce, melt the butter in a large saucepan over medium heat. Add the mushrooms and onions and cook until softened.
  5. Stir in the flour and cook for 1 minute.
  6. Gradually whisk in the water and sour cream. Bring to a simmer and cook for 5 minutes, or until the sauce has thickened. Season with salt and pepper to taste.
  7. To assemble the dish, preheat the oven to 190 degrees C (375 degrees F).
  8. Layer the potato pancakes and mushroom sauce in a greased casserole dish.
  9. Top with shredded cheese, if desired.
  10. Bake for 15 minutes, or until the cheese is melted and bubbly.
  11. Serve hot and enjoy!
